Ingredients:
- 6 medium Yukon gold potatoes, halved and thinly sliced
- 3 large Onions, halved and thinly sliced
- 3 large Sweet red peppers, thinly sliced
- 6 Garlic cloves, minced
- 1/3 cup Olive oil
- 3 teaspoons Salt
- 1 ½ teaspoons Pepper
- 12 Bun-length beef hot dogs
- 12 Hot dog buns
Directions:
- Combine oil, garlic, salt, and pepper in a large bowl and mix well.
- Add in potatoes, onion, and sweet red pepper and toss to coat.
- Transfer the potato mixture to two 13 by 9 inch, disposable aluminum foil pans, cover with aluminum foil and place both covered pans on grill rack over medium heat.
- Cook, covered, for 30 minutes or until potatoes are tender.
- Remove from heat, set aside.
- Grill hot dogs, covered over medium heat for 8 minutes or until heated through, turning occasionally.
- Put buns on the grill, cut side down, and grill until lightly toasted.
- Place potato mixture in each bun and top each bun with hot dogs.
- Serve immediately with the remaining potato mixture.
