Meatballs are super easy to make and with this recipe you will be able to make the most juicy and delicious ones.
These are amazing to serve with a huge variety of side dishes like: rice, grilled veggies, mashed potatoes, pasta, bread… you can even serve them just with the sauce as an entrée or appetizer.
Ingredients:
For the meatballs:
- 1 lb of ground beef
- 1 lb of ground pork
- 2 eggs
- 1 cup of breadcrumbs
- 1 onion, chopped
- 1 garlic clove, chopped
- Pinch of salt
- Pepper to taste
For the sauce:
- 2 tomatoes, cubed
- 1 red bell pepper, chopped
- 1 large onion, chopped
- 3 tbsp of olive oil
- Pepper to taste
- Salt to taste
Instructions:
- In a large bowl, combine the ground beef and ground pork. Mix well. Feel free to add another kind of meat into the recipe or to use only one, it is up to you.
- Season the meat with the chopped onion, chopped garlic clove, salt and pepper. The onion and garlic need to be really finely cut. Stir to incorporate.
- Whisk the eggs and pour them over the meat. Combine.
- Add the breadcrumbs. Using your clean hands, mix until the meat can form balls and are able to hold their shape.
- Place them in a tray or container and put them in the refrigerator at least 30 minutes so they can set or they could break while cooking them.
- In a large skillet, add the cubed tomatoes, chopped red bell pepper, chopped onion, olive oil, salt and pepper to taste. Stir with a wooden spoon or a spatula.
- After about 2 minutes, add the meatballs and let them cook completely with the other veggies. Make sure to rotate them every now and them.
- When all the meatballs look golden, serve the them with the veggie sauce on top.
