Macaroni Salad

This is a simple yet flavorful and vibrant macaroni salad that makes it a perfect side dish for a barbecue.

Preparation time: 5 minutes
Cooking time: 20 minutes
Serves: 4

Ingredients:
2 cups macaroni
1 cup mayonnaise
½ cup carrots (diced)
½ cup green peas
¼ cups red bell peppers (diced)
¼ cup yellow bell peppers (diced)
½ cup sweet corn
½ tsp. black pepper
1 ¼ tsp. dried oregano

Method:

  1. Boil the macaroni for 10 minutes or until tender.
  2. Boil carrots, peas, red bell peppers, yellow bell peppers and sweet corn for about 5 minutes or until the vegetables are softened.
  3. In a medium size bowl, add in the cooked macaroni.
  4. Toss in the boiled vegetables into the bowl. Mix them together.
  5. Add in mayonnaise, black pepper and ground oregano. Mix until well combined.
  6. Cover the salad with plastic wrap. Set the salad in the fridge for about an hour.
