These Marble Banana Bread Bars are going to be your new favorite go to breakfast/snack. If you want to personalize them a little bit, add chopped nuts or chocolate chips to make them extra yummy!

Yields: 8 portions
Ingredients:
For the banana bars:
- 3 bananas, ripped
- 1 ¼ cups of sugar
- ¾ cup of butter, room temperature
- 1 ¾ cups of all-purpose flour
- 2 eggs
- ¼ cup of Greek yogurt
- ¼ cup of cocoa powder
- 1 tsp of baking powder
- A pinch of salt
- 1 tbsp of vanilla extract
For the frosting:
- 3 cups of powdered sugar
- 1 cup of cream cheese
- 1 tbsp of vanilla extract
- A pinch of salt
Method:
For the banana bread bars:
- Preheat the oven to 350º F.
- In a bowl, add your bananas and smash them using a potato masher or a fork. Set aside.
- In a second bowl, cream together the butter, pinch of salt and sugar until creamy.
- Add in the Greek yogurt and eggs. Keep whisking to get a light and pale mixture.
- Incorporate the mashed bananas and vanilla extract.
- Sift in the all-purpose flour and baking powder. Fold in the ingredients to incorporate them completely.
- Separate the batter into two bowls.
- Leave one bowl exactly like that and add the cocoa powder into the second bowl. Stir to combine.
- Grease a 9 x 13-inch pan and place some spoonfuls of each batter into the pan, alternate between each to get a good marble effect.
- Bake the banana bread bars for 30 minutes or until you are able to insert a toothpick in the middle and it comes out just with tiny crumbs.
- When ready, take off from the oven and set aside to cool down before adding the cream cheese frosting.
For the cream cheese frosting:
- Whisk the cream cheese to make it softer.
- Add the vanilla extract and pinch of salt. Stir to combine.
- Start to add the powdered sugar, one cup at a time, and stir really well in between cups.
