Mixed Berries Pita Pizza

This amazingly delicious mixed berries pita pizza can be served as a breakfast or as a dessert.

Cooking time: 10 minutes

Ingredients:

  • 4 Greek pitas (no pockets)
  • Olive oil 2 tablespoons

For the cream cheese mixture:

  • 1 package (8 ounces) cream cheese, softened
  • 2 tablespoons sugar
  • 1 teaspoon alcohol-free vanilla extract

For the mixed berries topping:

  • 1 cup blueberries
  • 1 cup strawberries
  • ½ cup blackberries
  • ½ cup raspberries
  • ½ cup sugar
  • Mint leaves, for garnish

Directions:

  • Preheat your oven to 400 degrees F.
  • Brush olive oil on each pita and place directly on the oven rack and bake for 7 minutes or until lightly brown and toasted.
  • Meanwhile, in a mixing bowl beat together the cream cheese, sugar, and vanilla extract until smooth.
  • In another medium bowl, mix together the berries and sugar.
  • Place berry mixture in the refrigerator until ready to use.
  • Remove pita from the oven and allow them to cool completely, place them on a cooling rack so that they do not get soggy.
  • To assemble pizza; spread the cream cheese mixture over each pita and top with and even portion of the berry mixture.
  • Garnish with mint leaves and enjoy.
