Mixed Veggie Omelette

Ingredients:

  • 4 egg white
  • 3 egg yolks
  • 1 tbsp of chopped mint
  • ¼ cup of mushroom, chopped
  • ¼ cup of kale, chopped
  • 1 tbsp of freshly ground black pepper
  • 1 tbsp of avocado oil
  • Salt to taste

Directions:     

  1. In a bowl, add all the ingredients, except avocado oil.
  2. Beat the mixture using an electric beater.
  3. In a hot pan, add avocado oil and egg mixture.
  4. Cook at low heat with lid on for at least 5 min.
  5. Turn sides of the frittata, so that the both sides cook evenly.
  6. Serve hot.
