Oven Baked Chicken Leg Quarters

This recipe will show you how to make chicken leg quarters that are extra juicy in the inside and with a delicious crispy skin on the outside.

If you want to create kind of a one pan recipe, just add some veggies in the tray while baking the chicken. Some perfect to pair with this recipe are: red potatoes, carrots, asparagus and bell peppers.

Ingredients:

  • 4 leg quarters
  • 1 cup of barbecue sauce
  • 3 tbsp of mustard
  • 1 tbsp of garlic powder
  • 1 tsp of honey
  • Pepper to taste
  • Salt to taste

Instructions:

  1. In a large bowl, combine the barbecue sauce and mustard. Use your favorite kind of condiments but if you choose a sweet sauce like honey mustard, avoid adding extra honey later because the chicken would end being too sweet.
  2. Add the garlic powder, honey, pepper and salt. Stir to combine. If you want to change the garlic powder for minced garlic, use about 4 cloves, both options work great.
  3. Dip each leg quarter into the mixture and place them in a baking tray. Pour all of the extra sauce mixture all over the chicken and let the tray in the refrigerator for about an hour or two.
  4. Preheat the oven to 180 degrees C.
  5. Bake the chicken for 40 minutes. Don’t forget to keep an eye on them after 30 minutes because every oven is different so yours might need less time than others.
  6. After baked the chicken is perfect to serve, but if you want it extra crispy then follow the next step.
  7. In a large skillet, over medium heat, add about 2 tbsp of oil.
  8. When hot, add each chicken leg quarter until golden on each side.
  9. Place them in a paper towel to absorb the oil excess and then serve right away!
