Pasta Primavera

Ingredients:

  • 1 chicken breast cut into really small cubes
  • 1 green bell pepper cut into small chunks
  • 8 oz sweet corn strained
  • 5-6 mushrooms chopped ( not finely)
  • 4-5 tbsp black olives sliced
  • 2 oz cheddar cheese grated
  • 4 oz mozzarella cheese grated
  • 8 oz elbow macaroni

For sauce:

  • 2 tbsp oil
  • 2 tbsp butter
  • 2 tbsp garlic paste
  • 2 tbsp heaped Wheat flour
  • 2 cup milk plus stock if the sauce seems too thick
  • 1/2 tsp white pepper
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/2 small block cheddar cheese
  • 1 chicken cube
  • Salt to taste

Method

  1. Sauté chicken in a bit of olive oil and 1 tsp garlic paste till tender and water dries. Put aside.
  2. Boil macaroni according to packet instructions and set aside.
  3. For sauce, heat oil and butter , add garlic and sauté for a while add in wheat flour a little at a time and mix well using a whisk such that no lumps form.
  4. Add in milk and whisk till it starts to thicken , add in all the seasonings and cheese. Cook till cheese melts. Consistency should be such that it coats the back of a steel spoon. Add in the vegetables, chicken and macaroni.
  5. Pour in a baking dish and top with grated cheese , sprinkle paprika powder and oregano and bake in a preheated oven 350 degrees F for 10 mins and then under the broiler for additional 10 until the top is nicely melted and golden.
