Potato Croquettes

Enjoy these crunchy and scrumptious treats with your favorite dipping sauce.

Ingredients

1 tbsp milk
½ tsp salt
1 ½ tbsp. all-purpose flour
¼ tsp black pepper
½ tsp chives (chopped)
1 egg (beaten)
2 cups mashed potatoes
½ cup plus 1 tbsp. breadcrumbs
Vegetable oil (for frying)

Method:

  1. Use 3 small bowls to do the dips separately. Add flour to one bowl; add breadcrumbs to the next bowl and then add the beaten egg to the last bowl.
  2. Add the mashed potatoes in a medium bowl. Add milk, salt, black pepper and chives. Mix until the milk and seasonings are incorporated into the potatoes.
  3. Use the ice cream scoop to make equal sized balls.
  4. Dip one ball at a time into the flour, followed by the egg wash and then finally coat with breadcrumbs.
  5. Heat the frying pan to medium high. Pour the vegetable oil up to ½ inch of the pan. Let the oil heat up for 2 minutes.
  6. Place each potato ball into the pan. Space each ball evenly up to ½ inch apart to give them room to cook. Allow to cook each ball for 2-3 minutes until each ball is golden brown.
