Red Velvet Cupcakes

These cupcakes will charm the party guests with its alluring appearance: dark red and topped with luscious cream cheese frosting. These cupcakes are also so moist. We can promise you that your guests will fall in love at first bite!

Ingredients

For the cupcakes:

2 ½ cups white flour
1 cup white sugar
½ cup butter, softened
1 tsp. vanilla extract
2 tsp. baking powder
1 ¼ tsp. grated lime
2 eggs
½ tsp. salt
1 ½ tsp. red food coloring
2 tbsp. chocolate powder

For the frosting:

2 cups cream cheese
1 ½ cups powdered sugar
½ cup unsalted butter, softened
2 tsp. vanilla extract

Directions:

  1. Grease the cupcake pan with butter or vegetable oil. Set aside.
  2. In a mixer, beat the butter on medium power for 1 minute. Add sugar; cream together until light and fluffy.
  3. In a separate bowl, mix flour, baking powder and salt until well incorporated. Set aside.
  4. Beat the eggs, grated lime and vanilla extract together in another bowl until well combined. Add to the butter mixture and combine them together.
  5. Gradually add the flour mixture to the butter mixture. Switch to low power and mix ingredients together until well combined and smooth. Add red food coloring and chocolate powder. Mix until the mixture appears in a dark red color.
  6. Pour the mixture into the cupcake pan. Bake at 350 degrees F for about 35 minutes. Let cool and transfer the cupcakes to the cooling rack.
  7. For the frosting: Add cream cheese, powdered sugar, butter and vanilla extract in a mixer. Turn the mixer on low and combine the ingredients until you get a smooth consistency. Frost the cupcakes with a spatula.
