Refreshing Watermelon Salad

The refreshing blend of watermelon and onion with a splash of citrus makes this salad light and flavorful.

  • 14 cups cubed watermelon, seedless
  • 1 cup green onions, chopped
  • 1 medium red onion, halved and thinly sliced
  • 1 tablespoon sweet red pepper, finely chopped
  • ¾ cup orange juice
  • 3 tablespoons apple cider vinegar
  • 3 tablespoons honey
  • ¾ cup vegetable oil
  • ½ teaspoon salt
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon ground mustard
  • ¼ teaspoon pepper


  • Combine watermelon, green onion, and red onion in a large bowl.
  • Mix together the finely chopped red pepper, orange juice, apple cider vinegar, honey, salt, garlic powder, onion powder, ground mustard, and pepper in a small bowl.
  • Slowly whisk in the vegetable oil.
  • Pour orange juice mixture over watermelon mixture.
  • Toss gently to coat, cover, and refrigerate for at least 2 hours, stirring occasionally.
  • Serve with a slotted spoon.
