Ingredients:
- 2 finely chopped onion
- 2 chopped tomatoes
- 3 chopped green chillies
- 4 eggs
- 1/2 teaspoon salt
- 1 teaspoon red chilli flakes
- 1 tablespoon vinegar
- 1/2 teaspoon Turmeric powder
- 1 tbsp of Lemon juice
Garnishing :
- A few Fresh coriander leaves as per taste
- Black cumin seeds as per taste
- Oregano leaves as per taste
- Crushed black pepper as per taste
Directions:
- Take 2 tbs of olive oil in a pan and fry the onion until they get a lil golden brown
- Add tomatoes , green chillies , salt, chilli flakes, vinegar and turmeric powder.
- Mix and cook them for about 6-7 minutes until the tomatoes fragrant.
- Now add eggs one by one by making spaces between the tomatoes, and cover them and let them cook on a low flame until the eggs are done, add a dash of black pepper.
- Garnish it with garnishing items as mentioned above and drizzle some lemon juice forĀ flavour too.
- Serve and enjoy!
