Simple Lemon Baked Fish

Fish fillets are dipped in butter and lemon mixture then coated with seasoned flour and baked for 15 minutes, top with parsley and lemon zest.

Ingredients:

  • Cod fillets 4 (6 ounces each)
  • All-purpose flour ¼ cup
  • Salt ½ teaspoon
  • Paprika ¼ teaspoon
  • Lemon pepper seasoning ¼ teaspoon
  • Butter 3 tablespoons
  • Lemon juice 3 tablespoons
  • Fresh parsley 2 tablespoons, minced
  • Grated lemon zest 2 teaspoons

Directions:

  • Preheat your oven to 400 degrees F.
  • Mix together butter and lemon juice in a shallow bowl.
  • Combine flour, salt, paprika, and lemon pepper seasoning in another shallow bowl.
  • First dip each fillet in lemon butter mixture, then in flour mixture to coat both sides of fillet, shake off any excess flour.
  • Grease a 13 by 9-inch baking dish with cooking spray and place coated fillets in it.
  • Drizzle with remaining lemon butter mixture and bake for 15 minutes or until fish just begins to flake easily with a fork.
  • In a small bowl, combine parsley and lemon zest and sprinkle over baked fish.
  • Serve immediately.
