Ingredients:
- Cod fillets 4 (6 ounces each)
- All-purpose flour ¼ cup
- Salt ½ teaspoon
- Paprika ¼ teaspoon
- Lemon pepper seasoning ¼ teaspoon
- Butter 3 tablespoons
- Lemon juice 3 tablespoons
- Fresh parsley 2 tablespoons, minced
- Grated lemon zest 2 teaspoons
Directions:
- Preheat your oven to 400 degrees F.
- Mix together butter and lemon juice in a shallow bowl.
- Combine flour, salt, paprika, and lemon pepper seasoning in another shallow bowl.
- First dip each fillet in lemon butter mixture, then in flour mixture to coat both sides of fillet, shake off any excess flour.
- Grease a 13 by 9-inch baking dish with cooking spray and place coated fillets in it.
- Drizzle with remaining lemon butter mixture and bake for 15 minutes or until fish just begins to flake easily with a fork.
- In a small bowl, combine parsley and lemon zest and sprinkle over baked fish.
- Serve immediately.
