Spinach and Tomato Egg White Omelet

This omelet is super flavorful and super healthy with nutrients packed vegetables and cheese.

Ingredients:

  • 4 egg whites
  • ¼ cup fresh spinach, chopped
  • ¼ cup cherry tomatoes, chopped
  • ¼ cup kalamata olives, chopped
  • ¼ cup feta cheese
  • 1 teaspoon olive oil
  • Salt and pepper to taste

Directions:

  • Whisk the egg whites, salt, and pepper until a little frothy.
  • In a non-stick skillet, heat olive oil over low heat.
  • Transfer whisked egg whites to the skillet and swirl them until they completely coat the bottom of the skillet.
  • By using a spatula pull the egg whites to the center, exposing parts of the skillet and allowing the eggs to fill the exposed parts so that it cooks completely.
  • When the omelet has almost set add the vegetables and feta cheese to half of the omelet and fold half of the omelet that doesn’t have filling over the cheese and vegetables.
  • Cook for another 40 to 50 seconds or until the vegetables are warmed.
  • Serve immediately.
