Strawberry Cheesecake Ice Cream

Ingredients:

  • 12 biscuits crushed in to pieces 
  • 2 cups whipping cream 
  • 1 tub Philadelphia cream cheese 
  • 1 cup condensed milk 
  • 1/2 cup sugar 
  • 1 1/2 cup chopped strawberries 
  • 1 tsp lemon juice

Method

  1. Whisk cream cheese along with condensed milk and add in half crushed biscuits. Whip cream until soft peaks. 
  2. In a saucepan, add sugar and strawberries along with lemon juice and cook till simmering. You don’t want a strawberry bite in ice cream so don’t over cook. Cool. 
  3. Mix cream with condensed milk and cream cheese mixture and fold gently.  Add in strawberry mixture and fold. 
  4. Pour in an air tight container and top with rest of the crushed biscuits. Freeze over night.
