This stuffed chicken breast recipe is perfect to have some fun in the kitchen and to use your creativity with the different kind of ingredients that you can combine!
Ingredients:
- 2 large chicken breasts, boneless
- 8 slices of ham
- 4 eggs, boiled
- 2 large carrots, cooked and shredded
- 2 tbsp of oregano
- 2 tbsp of yellow mustard
- 1 tbsp of olive oil
- Salt to taste
- Black pepper to taste
Instructions:
- Preheat the oven to 180 degrees C.
- Cut each chicken breast in half, lengthwise, with a sharp knife. You will end with 4 pieces.
- Using a rolling pin, or any similar tool, make your chicken breasts flatter. You need them to big large and thin, this way is going to be easier to stuff them.
- In a cup, mix together the olive oil, yellow mustard, oregano, salt and black pepper to taste.
- Brush your chicken breasts with the mustard mixture. Do it on both sides to make sure it has enough flavor.
- Time to stuff the chicken!
- First, place about 2 slices of ham on each chicken breast. If you want to add some cheese, here is when.
- Divide the shredded carrots in four portions and add one into each chicken breast, all over the ham.
- To finish, place on the carrots two boiled eggs. You can cut them if you want or leave them complete to get a nice cut when ready.
- Roll each chicken breast to close the and pinch them with a toothpick to avoid them to open while cooking.
- On a previously greased baking sheet, add the 4 stuffed chicken breasts and cook for 40 minutes.
When completely cooked, remove the toothpicks and serve while hot with your favorite side dishes
