These giant supreme chicken cutlets are juicy, crispy and full of flavor. The recipe is really easy to follow and to customize with your favorite ingredients.
Ingredients:
- 2 large chicken cutlets, boneless
- 1 large tomato, sliced
- 4 slices of ham
- 4 slices of emmental cheese
- 1/3 cup of all purpose flour
- 1/4 cup of breadcrumbs
- 6 eggs
- 4 tbsp of yellow mustard
- Salt to taste
- Pepper to taste
- Parsley to garnish
- Oil to fry
Instructions:
- Using a meat tenderizer, hit the boneless chicken to flat it even more and get a bigger and thinner cutlet. Do the same with both pieces.
- Spice the chicken up with some mustard, salt and black pepper. Feel free to add any other condiment you like.
- In a bowl, beat two eggs and add in a pinch of salt.
- In a shallow plate, add in the all purpose flour and breadcrumbs. Stir to combine. You can also use just breadcrumbs but I recommend to use the combo.
- Cover the chicken cutlets into the beaten eggs, then flour mixture, eggs again and finally flour mixture. Doing a double coating will give us a crispier texture.
- In a large pan, over medium heat, add the oil and when hot enough, start to fry the chicken cutlets.
- When golden, place them on an absorbent paper to eliminate oil excess while preparing the ramaining elements.
- Slice the tomatoes and sparkle some salt on top of them.
- In a smaller pan, fry two eggs at a time. So you will end with two pair of two fried eggs. I like to keep the yolks soft but that is up to you.
- Serve the cutlets in a large plate and add the ham, cheese, tomato slices, fried eggs and parsley to decorate!
