Tempting Spring Salad

This delish colorful spring vegetable salad is packed with lots of healthy nutrients.

Ingredients:

For salad

  • ½ cup shredded red cabbage
  • 1 medium fennel bulb, thinly sliced
  • 1 cup chopped fresh broccoli
  • 3 cups torn romaine lettuce
  • 5 cups chopped fresh kale
  • 1 package (14 ounces) coleslaw mix
  • 1 cup crumbled feta cheese
  • ¼ cup toasted sesame seeds
  • ¼ cup sliced fresh strawberries, for garnish

For dressing:

  • 1/3 cup pureed strawberries
  • 1/3 cup extra virgin olive oil
  • 3 tablespoons sesame oil
  • 2 tablespoons cider vinegar
  • 2 tablespoons lemon juice
  • 2 tablespoons honey

Directions:

  • Combine all ingredients of dressing in a mixing bowl, cover, and refrigerate until ready to serve.
  • Mix together red cabbage, fennel bulb, broccoli, lettuce, kale, and coleslaw mix in a large bowl.
  • Sprinkle with feta cheese and sesame seeds and toss to combine.
  • Dress salad just before serving, garnish with sliced strawberries, and serve.
