This delish colorful spring vegetable salad is packed with lots of healthy nutrients.

Ingredients:
For salad
- ½ cup shredded red cabbage
- 1 medium fennel bulb, thinly sliced
- 1 cup chopped fresh broccoli
- 3 cups torn romaine lettuce
- 5 cups chopped fresh kale
- 1 package (14 ounces) coleslaw mix
- 1 cup crumbled feta cheese
- ¼ cup toasted sesame seeds
- ¼ cup sliced fresh strawberries, for garnish
For dressing:
- 1/3 cup pureed strawberries
- 1/3 cup extra virgin olive oil
- 3 tablespoons sesame oil
- 2 tablespoons cider vinegar
- 2 tablespoons lemon juice
- 2 tablespoons honey
Directions:
- Combine all ingredients of dressing in a mixing bowl, cover, and refrigerate until ready to serve.
- Mix together red cabbage, fennel bulb, broccoli, lettuce, kale, and coleslaw mix in a large bowl.
- Sprinkle with feta cheese and sesame seeds and toss to combine.
- Dress salad just before serving, garnish with sliced strawberries, and serve.
