Tomato Avocado And Turkey Bacon Sandwich

These classic sandwiches are made with some fresh summer vegetables and turkey bacon.

Cooking time: 10 minutes

Ingredients:

  • 1 large tomato, sliced
  • 1 Hass avocado, pitted and sliced
  • 12 or 16 slices (8 ounces) of turkey bacon
  • 1 1/3 cups radish sprouts
  • 8 slices rustic bread
  • 2 tablespoons+2 teaspoons mayonnaise
  • Coarse salt

Directions:

  • In a large skillet, cook the turkey bacon over medium heat for 9 minutes or until crisp, turning occasionally.
  • Transfer to a paper towel-lined platter to drain.
  • Lightly toast bread slices.
  • Spread 1 teaspoon of mayonnaise onto 1 side of each toasted slice.
  • Take 4 bread slices and pile on tomato, avocado, radish sprouts, and turkey bacon on each slice.
  • Season with salt and top with remaining bread slices.
