Ingredients:
- 1 cup of watermelon pieces
- 125g chicken pieces of medium size
- ¼ cup of roasted sunflower seeds
- ¼ cup of tofu, pieces
- ¼ cup of chicken stock
- ½ cup of arugula leaves
- 1 tbsp of freshly ground black pepper
- ¼ tbsp of turmeric powder
- 1 tbsp of ginger paste
- 1 tbsp of garlic paste
- Salt to taste
Method:
- Add chicken, garlic paste, ginger paste, salt and pepper to a bowl.
- Mix them thoroughly and allow the mixture to rest for 1 hour.
- After 1 hour, transfer the content to a baking tray.
- Bake at 325F for 30 min.
- After baking it, add baked chicken to a pan of chicken stock.
- Allow the mixture to boil for 5 min and remove the excess liquid.
- In a bowl, add chicken pieces, watermelon pieces, sunflower seeds, tofu, arugula leaves, ground pepper and salt.
- Give a gentle mix and serve.
