Turmeric Omelette

Ingredients:
• 3 eggs
• 1 tbsp of parsley, finely chopped
• 1 tbsp of lemon grass, chopped
• ½ tbsp of thyme
• ½ tbsp of turmeric powder
• 1 tbsp of freshly ground pepper
• 1 tbsp of olive oil
• Salt to taste

Directions:

  1. In a bowl, add all the ingredients except olive oil.
  2. Give a thorough mix using an electric beater.
  3. In a hot pan, add olive oil and egg mixture.
  4. Cook at low heat with lid on.
  5. Serve hot.
