Veggie Stir Fry Noodles

This recipe is going to be your new lifesaver. It is perfect for when craving something extremely delicious but also healthy and quick to cook.

The combination of veggies that this recipe calls for is highly appetizing but feel free to use your imagination and create as many combinations as you want! Take a look inside the fridge and take advantage of any vegetable leftovers you can find. Grilled chicken or beef can be a great companion for this dish too.

Ingredients:

  • 8 oz of egg noodles
  • 2 cloves of garlic
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 zucchini, sliced
  • 1 large onion, sliced
  • 3 tbsp of soy sauce
  • 2 tbsp of sugar
  • 2 tbsp of olive oil
  • A pinch of salt
  • Pepper to taste, optional

 

Method:

  1. Cook the egg noodles following the package instructions. When ready drain and set aside to use later.
  2. Slice all your vegetables. You can choose if you want them really thin or rather big chunks. This will depend on your taste; any option will work.
  3. In a large skillet, over medium heat, add the olive oil and when already hot incorporate the minced garlic.
  4. Add all the sliced vegetables, sugar, soy sauce, salt and pepper. Last one is optional but recommendable, if you want your dish to be spicier, add some Sriracha sauce.
  5. Mix in the egg noodles and stir well to combine all the ingredients. Also, here is the perfect time to add your already cooked chicken or beef. Cook for around 5 to 7 minutes.
  6. Your dish is ready to be served!
