Winter Soups That Will Warm You Right Up

Cold weather needs hot soup. Whether you set them to cook up in your slow cooker or you throw it together when you get home, it doesn’t take long to make a pot of soothing, warming soup to fill you up.

Give these soups a try the next time you need a hug from the inside!

1. Sausage, Lentil and Spinach Soup

Savory sausage and lentils make for a hearty soup. Simply brown ground sausage and add in chicken broth and cannellini beans. Let it boil and then add in a can of diced tomatoes. Toss in some fresh spinach once everything heats through and let it wilt. Then top this fabulous soup with crumbles of fresh goat cheese. Serve with crusty bread for a filling meal.

2. Loaded Baked Potato Soup

Toss all this in your slow cooker and come in from the cold to this filling soup. Peel potatoes and cut them into chunks, then add to your slow cooker with chicken broth and a quarter stick of butter. Once you get home, add milk (or cream for a more decadent experience) and blend it to puree it into a creamy dream come true. Then let the fun begin with your favorite toppings. Treat it like a loaded baked potato and give it some bacon crumbles, shredded cheddar, chives, and sour cream.

3. Cheater’s Wonton Soup

If you love Chinese takeout but don’t have the time to wait for delivery, you can make your own quick and easy version of it without rolling up pork-filled dumplings yourself. All you need is chicken broth for the base and a bag of frozen Chinese dumplings. Boil them until they cook through and drop in a touch of soy sauce and rice vinegar while you’re at it. Scallions add some color too. This can be on your table in about 15 minutes!

4. Black Bean Soup

Looking for a meatless meal? Whether you’re vegan or you just want to take a break from meat for a meal, this filling southwest-style soup is for you. Pour two cans of organic black beans into your slow cooker with two cups of salsa, and a cup of veggie broth. Then add a few pinches of cumin and chili powder. You can blend it up or keep it chunky. A garnish of fresh avocado takes it to the next level.

5. Creamy Chicken Gnocchi Soup

If you love Olive Garden’s famed soup, this one comes pretty close. In a big pot, brown your chicken with butter. Remove it and sauté carrots, onions, garlic, and celery until just tender. Add a little flour and whisk, then milk, bouillon, and cream. Add pepper too. Bring it to a boil and reduce heat to let it thicken, then add gnocchi and some fresh spinach until it cooks through. Add back your chicken and voila! Perfection!
