XL Chicken Salad

Some people feel that salads are always just plain lettuce and some tomatoes. The reality is that are infinity ways to make a delicious and filling salad; keep reading to learn how to make this recipe.

Ingredients:

  • 1 chicken breast
  • 1 head of lettuce, small
  • 1 head of purple lettuce, small
  • 2 cups of seedless grapes, sliced
  • 2 cups of cherry tomatoes
  • 6 large mushrooms, sliced
  • 1/4 cup of almonds, sliced
  • 2 tbsp of mustard
  • Salt to taste
  • Pepper to taste 

Instructions:

  1. Cut your chicken breast in thin strips and season them with mustard, salt and pepper.
  2. Cook your chicken in a non-stick skillet to make the perfect grilled chicken. When ready, set aside.
  3. In a large bowl, place both of the lettuces and add 2 cups of water and some white vinegar to clean them. Soak them for 5 minutes and then rinse them with more water; drain them to assemble the salad. I recommend washing your lettuce regardless of where you bought it.
  4. Assemble your salad with a bed of lettuce, slices mushrooms, sliced grapes, cherry tomatoes, chicken and almonds! A little tip to make the salad extra crunchy is to toast the almonds before adding them. Bake them at 180 degrees C. for about 5-10 minutes or until brown ish. Let them cool down before adding them to the salad.
  5. Serve as a main meal or side dish!

What about the dressings?

For this salad I recommend preparing an easy balsamic vinaigrette. For this you’ll only need:

  • 2/3 cup of extra virgin olive oil
  • 1/4 cup of balsamic vinager
  • 1 tsp of honey
  • Salt to taste
  • Pepper to taste

Mix all the ingredients together and serve with any salad you want!
