Avocados Red Pepper And Corn Salsa

You can serve this healthy salsa with chicken or steak or simply serve it with tortilla chips.

Preparation time: 20 minutes

Ingredients:

  • 1/3 cup olive oil
  • 4 medium ripe avocadoes, peeled and chopped
  • 1 medium sweet red pepper, chopped
  • 1 small onion, chopped
  • 2 cans (2 ¼ ounces) sliced ripe olives, drained
  • 1 2/3 cups (8 ¼ ounces) frozen corns, thawed
  • 5 garlic cloves, minced
  • 4 tablespoons lemon juice
  • 3 tablespoons apple cider vinegar
  • 1 teaspoon dried oregano
  • ½ teaspoon pepper
  • ½ teaspoon salt
  • Tortilla chips for serving

Directions:

  • In a large mixing bowl, combine red pepper, onion, olives, and corns.
  • In another bowl, whisk together olive oil, minced garlic, lemon juice, vinegar, oregano, pepper, and salt until well blended.
  • Pour olive oil mixture over corn mixture and toss to coat.
  • Cover, and refrigerate overnight.
  • When you are ready to serve, stir chopped avocadoes in salsa and serve with tortilla chips.
