You can serve this healthy salsa with chicken or steak or simply serve it with tortilla chips.

Ingredients:
- 1/3 cup olive oil
- 4 medium ripe avocadoes, peeled and chopped
- 1 medium sweet red pepper, chopped
- 1 small onion, chopped
- 2 cans (2 ¼ ounces) sliced ripe olives, drained
- 1 2/3 cups (8 ¼ ounces) frozen corns, thawed
- 5 garlic cloves, minced
- 4 tablespoons lemon juice
- 3 tablespoons apple cider vinegar
- 1 teaspoon dried oregano
- ½ teaspoon pepper
- ½ teaspoon salt
- Tortilla chips for serving
Directions:
- In a large mixing bowl, combine red pepper, onion, olives, and corns.
- In another bowl, whisk together olive oil, minced garlic, lemon juice, vinegar, oregano, pepper, and salt until well blended.
- Pour olive oil mixture over corn mixture and toss to coat.
- Cover, and refrigerate overnight.
- When you are ready to serve, stir chopped avocadoes in salsa and serve with tortilla chips.
